Dessert Stormed with Katwo Puertollano at Five Cows
May 26, 2010With her insight on food-sex equivalence, petite powerhouse artist Katwo Puertollano rouses up her sweet tooth and puts Five Cows resto and ice cream bar to the test.

Eliminate the associations with late night binging, “brain freeze” and diabetes, and ice cream could actually turn out to be man’s BFF more than his “frenemy.” For starters, ice cream has calcium that helps control blood pressure and weight. In addition, we share a long and ancient history with this fine confection, as its earliest versions originated from rulers and emperors wanting to top ice with fruits and honey.
Katwo Puertollano, fiery frontwoman of all-female band Duster, proved a newfound ideal munchmate―she found time to chat with us in between bites, taking a break from her co-management duties as owner of design boutique 27+20 (with husband Nico Puertollano) to see what Chef Eugene Raymundo’s Five Cows Resto and Ice Cream Bar in Trinoma has to offer.
How much do you like food?
Like it? I love it! I like food so much I want to take it behind a middle school and get it pregnant. (That’s not me, that’s from Tracy Jordan.) Seriously though, I think foodie blogs will soon catch up with porn sites, food is the new sex!
First impression of Five Cows?
It’s a really nice place; I like the shabby chic interior of the place. I think the lighting is gorgeous and the staff is really courteous.
What do you usually go for?
I really appreciate food that’s been prepared and served with love. I prefer Asian cuisine to European cuisine. I love eating in restaurants that are/were converted kitchen spaces from the house of the chef/owner.
Are you a fan of desserts?
I love fruits, flan and crème brulée. I also like cake and ice cream.
Tell us something about what you ate. Which one did you fancy the most?
The Asian salad was simple and nice; the orange cuts were a nice accent to the flavor. I liked the grilled rib strips, especially the way the flavor of the meat combined with the sweet-tangy sauce, although the meat could’ve been more tender. The Ferrero Crunch Supreme was a good deconstruction of the typical ice cream cone, and the added choco-cereal pieces were a nice surprise. I liked the mango cheesecake, but I didn’t really taste the cheese. I would suggest that instead of an additional layer of ice cream, maybe replacing it with meringue would’ve made it more exquisite. The Rocky Almond bars were an intense and delightful chocolate delight to end the meal.
Which one was your least favorite?
I wasn’t impressed with the hamburger, the patty was dry and I couldn’t taste the meat flavor and the cheese was unremarkable.
On a regular Friday night, would you most likely go to your tried and tested food spots?
It really depends on our mood, but one thing we’ve learned is: If you’re hungry, don’t experiment.
What should Filipinos keep in mind when running or planning to run their own restaurants in Manila?
People can taste the MSG and Knorr condiments you substitute for real flavor. Always serve food with love, passion and please, follow health code regulations. When you serve your food on Styrofoam for takeout make sure that you don’t give out the ones bitten by rats. True story.
What do you think is the key to being successful in this business?
I love restaurants that are smarter than me and those restaurants, in their humble or flamboyant ways, always impress me with great service and great food. And if you’ve seen the last two seasons of Gordon Ramsey’s Kitchen Nightmares it’s all about serving freshly prepared food, minimizing the menu, creating a signature dish and maintaining the restaurant clean.
So what’s the verdict?
I recommend having the ribs and ice cream for ladies who are in the PMS-ing stages. Maybe some desserts could’ve used ice cream to accent a pastry or cake instead of having it as the centerpiece. Overall, I would’ve been more impressed if they actually created their ice cream from scratch and found more playful ways to integrate it with their pastries rather than just the usual ice cream cake combination. However, I was really impressed with the Flaming Alaska―the presentation was entertaining and it piqued my curiosity. Too bad we didn’t try it.
Was it worth the price?
Yes, I think it’s very worth it.
For what type of occasion do you think Five Cows is most suited?
[It’s perfect for] college kids whose metabolism hasn’t plateaued yet.
